This has been a long time coming but I am officially back! and I will do my best to post as often as I can.Since I am in wisconsin for a couple of months I figured I would do a series my favourite cheese themed food.

Starting with macaroni and cheese I posted this on my instagram a couple days ago which eventually led to this.Macaroni and cheese is probably one of the simplest meals but can be eaten in so many different ways, that is why I love it so much! Food that can do many things is the best best kind of food especially coming from being a student ,being creative with your food that is also pocket friendly is essential for survival.

What you will need:

  1. 1 teaspoon of salt
  2. 1/3 teaspoon of pepper
  3. 3 chives
  4. 4 cloves of garlic
  5. 1 1/2 tablespoon of flour
  6. 1 cup of milk
  7. 150g salted butter
  8. 1/2 cup pepper jack cheese
  9. 1/2 cup cheddar cheese
  10. 1 table spoon of olive oil
  11. 150g of crackers
  12. 200g elbow pasta

I began with a basic roux turn on  stove  to lower heat about 3 ;150g of salted butter and Get  3 chives/spring onions roughly chopped (looks more home made) let it sweat for a good 7 minutes.After this is done add 4 cloves of garlic , 1 teaspoon of salt and 1/2 teaspoon of black pepper and continue sweating for an  additional 5 minutes. Garlic tends to burn quicker than chives/spring onion  so don’t do it at the same time.Once the butter has fully absorbed the flavour add one tablespoon of flour whisk it real quick so it does not clump up and then add half a tablespoon of flour quickly whisking after as well.After the butter and flour have cooked for about one minute and a half Add one cup of milk and continue stirring until the consistency of the sauce starts to thicken(you can always add more milk if you think the sauce is too thick).The hard bit is over now you can add whatever cheese your heart desires.I added 1/2 cup  pepperjack and 1/2 cup cheddar then went on to add some chopped mushrooms just to make it a little bit more full.I didn’t include that many types of cheese out fear that it would eliminate  the flavour of the onion.

In a separate pot add  tablesppon of olive oil to half filled pot of water and salt ,bring to boil before adding 200g of elbow pasta. Let it cook for 10-15 mins before straining and adding pasta to the sauce.

In a bag grab 150g of crackers ,bash them until they are completely crumbed  then melt  100g of butter and mix with crackers evenly. If you’re on a diet I would advise you  to leave now while you still can….Place the macaroni and cheese in a baking tray and spread the crumbs evenly before eventually adding some grated cheese on the top; 1/2 cup parmesan and 1/2 cup cheddar. bake in the oven at 150 degrees until the cheese has melted evenly and that’s it!
